I really do enjoy making cakes, cookies, cupcakes and BLACKBERRY COBBLER!! My mom has taught me pretty much all I know about cooking anything and I still call her all the time to ask her questions. So, tonight I wanted to make her blackberry cobbler, which I love! I have made this several times and I always like it. Matt, on the other hand, wants it to have a little more juice which is fine. He suggested using blackberry pie filling which I have used before because I had a can of it for some reason. I had decided the other day that I wanted to make it this week sometime and tonight happened to be the best time.
Well, I went to my spin class at 5:30 and was trying to decide if I wanted to stop and get the pie filling at Brookshires by my house or not. I decide to go in, all sweaty, and pray that I don't see anyone I know which I normally do b/c we really do have a lot of friends in this town. And of course, I haven't walked three steps in and a lady from church is about to check out and stops me and says she had laminated this article about Matt that was in the Sunday paper and would mail it to us. (I was so proud of him!!) Anyway, I go on to the aisle with the pie filling and low and behold, there's another couple that we know! Some of our Methodists friends who Matt went to Mexico with and they recognized me which was crazy. Anyway, I'm finished with my "I can't believe I'm seeing all these people I know dressed like this!" drama. I find the pie filling and it's $4.58! That's so crazy! I could have bought a whole pie for that price! So, I went home and had to disappoint my husband b/c I was NOT spending that kind of money on pie filling.
I was still planning to make the cobbler, I just didn't know if it would be juicy enough. But it's my mom to the rescue. I had to call her b/c I only had All Purpose flour and knew I needed self-rising flour. But I know you have to add baking powder and salt to the All Purpose to make it rise, I just didn't know how much. She gave me an idea of what to do so I asked her how to make it juicer without blackberry pie filling. And it worked! Matt said that it's my best cobbler yet! I was so excited!

Ingredients:
1 cup self rising flour (that way you don't have to use salt or baking powder)
1 cup sugar
1 cup milk
1/2 stick butter
4 cups (about) of blackberries (to get them juicy: bring blackberries to a boil with a cup of water and a cup of sugar on stovetop)
1/2 cup sugar
To cook:
Put the 1/2 stick of butter in a 9x13 inch pan while it's preheating to 350 degrees. ( If butter melts and starts popping before it gets hot enough, take pan out of oven and continue preheating the oven. )
Start boiling your blackberries on the stove with the cup of water (do not cover the berries) and the cup of sugar. Stir and cook til they are boiling.
Mix your cups of flour and sugar together then add your cup of milk til it's a runny consistency.
Pour your dough mixture into the pan that has the melted butter, then scoop your berries into the pan on top of the dough mixture, spreading evenly. You'll have juice left over so pour that into the pan as well.
Cook for about 40-45 minutes and serve!
